So, what makes USDA Grade A chicken so special? Nothing! USDA Grade A chicken can be the cheapest commodity chicken, raised on antibiotics, animal by-products and pumped full of water and salt. What then, you may ask, makes chicken USDA Grade A? Simply this: A company pays the USDA's Agricultural Marketing Service to have an inspector check the surface presentation of the chicken and, when the presentation (feather quantity, bruise size, skin tear size) meets the visual standard, the package is passed as Grade A. It has nothing to do with how it was raised or with what is inside the chicken. USDA Grade A only means that the chicken looks OK; it has nothing to do with whether or not the chicken is of exceptional quality.
